Happy Våffeldagen (Waffel Day) – March 25th

Liege waffle with strawberries and hot fudge.
Heat and eat some waffles with you coffee maker.

Yep, I took a little bite out of it.

You can heat up some waffles on the burner of your coffee maker.

I got some Liege waffles from a local place called the Waffle Hut and put them in the freezer.
You can use any frozen waffles, but I also found some fresh in a pkg. at my local store and these would be great to send to you Soldier.
Thaw your waffles if they are frozen.
Put a piece of foil on your burner, put the waffle on to cook with a little lid over it.
Flip them over.
Cook time about 20 minutes.

They are so much better than those cooked in the microwave, they will be crispy on the outside and soft inside.

Top with anything you like.

I found some fresh waffles and I will post about them later, now I have to get back to farm chores. Spring on the farm is such a busy time for me.

National Corn Dog Day — Always the 3rd Sat. in March

You don’t have to be left out, you can cook some mini corn dogs with your coffee maker.

If you want to put some little sticks on them, you can try bamboo party forks, coffee stir sticks or even some chopsticks. I just cut them with my kitchen scissors. Thaw them in the refrigerator first.

Find a little pan and lightly oil it.

To build a little mini oven, just put another pan on top.

Turn them every few minutes till they are done. They won’t brown much but they will be crisper than if you put them in the microwave.

FAQ
Q. Can I heat a regular size corn dog with the coffee maker?
A. Sure, just cut the stick off and you should be able to find a pan that it will fit in. Turn it
every 5 minutes or so. And don’t forget to defrost it first.

Corned Beef, cooked in a Coffee Maker.

St. Patrick’s Day has become all about, The Wearing Of The Green, the day where every body is Irish for a day, and one of my favorite holidays.

It’s the day where everyone eats corned beef and cabbage, though it is not a traditional Irish food, but instead an Irish American dish. Being 3 rd generation Irish American, it’s something I grew up with and it’s not just for St. Patties Day.

You can’t cook a very big brisket in a coffee maker but you can make enough for two. But there were no left overs, and it’s been a while since I made one and I had forgotten how much I love it, so I will get a few more for the freezer, because I do love corned beef sandwiches.

The first time I cooked a corned beef in my coffee maker, my cousin Traci was visiting. She said you can’t cook a corned beef in a coffee maker, I reminded her of all the soups, muffins and chickens I had prepared for her in the past few weeks. Her reply was, but you can’t cook a corned beef in a coffee maker, I think I really got her Irish up. Being O’Hara kids we are all really opinionated, so I asked her how she cooked hers, she said she cook them in a slow cooker, I laughed and 4 hours later, she said that it was the best corned beef she had ever eaten. Traci, I miss you and wish you were here to share this with me, I’m so glad that you realized that it’s not what you cook it in but that the proof is in the tasting.

ingredients
2 1/2 lb Corned Beef Brisket (trim off the fat) (approx 1/2 kg)
(you can fit a larger one, but you will need to trim
all of the fat off)
5 cups water (approx 1 liter)

I used a point cut, I don’t know the difference between the cuts. The next time I make one I will try to date.

directions

Rinse the brisket.
Cut it in half length wise.

pre-warm the meat

Pour 2 1/2 cups water into the reservoir to heat and allow to drip into the coffee pot, pour this water back thru and drip into the pot again.

Put brisket in a bowl, pour the double heated water over it . Allow it to sit in the water for a few minutes to warm. (This gives it a jump-start, it raises the temperature of the meat about 40 degrees, it keeps the water in the pot from cooling off so much. In most cases it will shorten your cooking time considerably, but in this case you are still going to cook it for a long time as a brisket is a very tough cut of meat.)

Insulate the pot by wrapping it in a double layer of foil.

cook
Double heat 2 1/2 cups more water.
Drain the brisket and put it into the pot with the heated water. Use plastic tongs and be careful, the water is very hot. Add the season pack that came with it. If it is not covered with water, pour a little more into the reservoir and let it drip thru onto the meat.
Cover the top with foil.
Cook time 3 1/2 – 4 hours.

Pour double heated water over meat to pre-heat it.

It’s National Pancake Day and I can’t think of a better way to celebrate it than cooking some pancakes with your coffee maker.

Pancakes are great anytime of the day or night and if you only have a coffee maker, no problem, you can cook your cakes and eat um too.

Use your favorite pancake mix or make it from scratch.

Cover the burner with non stick foil, oil it and turn on the machine.

Let it warm up while you mix up your batter, use what ever you like.

1 cup of mix makes about 6 pancakes.
Use a little less than ¼ cup batter per cake.

Cook until the bubbles stop forming and popping, then check for brownness, they will not get very brown unless you leave them on for a long time and by then the might be a little rubbery. Turn them over and cook for a couple more minutes.

I use non-stick foil placed on the burner, smooth it out nicely, and put a little oil on it with a paper towel. I have a little pan that I use sometimes but it is faster with the foil on the burner. Sometimes I put a little lid over it to help it cook faster, it collects a lot of moisture so be sure to wipe it off between each pancake.

Blueberry Sauce
Blueberry Fruit Spread from a jar.
Water to thin.
Fresh blueberries if you have them.

Put the spread in a pan to warm on the burner, add a little water to thin, add some berries and heat till warm.

Chocolate Cupcakes. Making special treats with your coffee maker is fun and easy and even better if it’s chocolate. You can bake 4 mini cupcakes at a time with your coffee cake maker.

I only make mini cupcakes, as larger ones won’t cook all the way thru. Use any recipe or your favorite Chocolate Cake Mix. If you don’t want chocolate use any flavor you like.
I only use water when using a mix to make cupcakes with my coffee maker, it makes a lighter cupcake than using eggs and oil. I’m not sure why, it might have to do with baking at such a low temperature. (Anyway it’s all about experimenting, so try what ever you want.) Besides it makes it real easy to just add water, you don’t need to have anything else on hand. Since you’re not using eggs, you can eat the batter raw, it makes a great frosting if you have any left over.

You can make 4 mini cupcakes at a time with your coffee maker. But you’ll need to build a mini oven.

Mini Oven 1 metal bowl, (three cup size will works nicely).

Cupcake Holders 4 metal cupcake holders.
A few things I’ve tried.

1/8 cup measuring cups, sold individually as coffee measuring cups. Cut the handles off leaving about 1 in. I used tin snips to cut mine.

Sleeves made from a soda can. Cut 3/4 in. strips from a soda can and use 2 paper clips to hold them together. I used my scissors to cut them, be careful they will be sharp.

                   Mini Oven Cupcake Holders

1/8 cup measuring cups and a sleeve made from a soda can

Pre-warm your oven place your metal bow upside down on top of the burner and let it warm for about 5 minutes.

Bake Your Cupcakes (4 at a time)

1 cup cake mix (makes about 12 cupcakes / 3 batches).

1/2 c water (this is only a approximate, some batters may take less).

Make the batter just slightly looser than brownie batter, but not so loose that it will pour.

Put papers into your metal cups and fill just over 1/2 way with batter.

Put your 4 cups onto the burner.

Put your heated bowl back over them.

Bake 15-18 minutes.

Frost or leave un-frosted, but remember if you make your cupcakes with out eggs you can use some of the batter to frost them. And who doesn’t love to eat the batter and lick the spoon.

So what did I bake the cake in? I have 2 little pans from my Easy Bake Oven, do you remember those, I sill have one in the barn and it still works, what’s not to work, it’s only a light bulb in a box.

I only use water when using a mix to make cakes or cupcakes with my coffee maker, it makes a lighter cake than using eggs and oil. I’m not sure why, it might have to do with baking at such a low temperature.
Mini Cake Pan, I used 2 little pans from my easy bake oven.

Pre-warm your oven place your metal bow upside down on top of the burner and let it warm for about 5 minutes.

Bake Your Cake

1 cup cake mix (this will give you enough for a 4 layer cake or three layers with some left over to frost your cake).

1/2 c water (this is only a approximate, some batters may take less).

Make the batter just slightly looser than brownie batter, but not so loose that it will pour.

Grease your pan and cut a parchment circle for the bottom, grease it too on both sides, (the grease on the bottom of the parchment paper will help it stick to the pan while you are adding the batter.

Put 3 Tbsp. batter into your pan.

Quickly take your heated off bowl off the burner, put your cake pan on and replace the hot bowl covering the cake pan.

Bake 18 minutes.

Frost or leave unfrosted, but remember if you make your cakes with out eggs you can use some of the batter to frost them.

When I first started cooking with my coffee maker I wasn’t sure if I could really cook anything at all with it. I was hoping to be able to make easy things like oatmeal, Ramen and mac and cheese and I didn’t want to have to wash the pot. I needed a different vessel to experiment with, and as I thought about what might fit on the burner, I remembered my trusty camp cups. Since I’d used my camp cups for cooking these very same things out camping, I figured they’d be perfect for the coffee maker. They had flat bottoms, and since metal is a better conductor of heat than glass, my food would heat up a little quicker in the cups than in the pot. As I experimented I found that if I put a lid on my metal cups not only would they heat up faster but I could raise the temperature by about 50 degrees. When cooking on an appliance that doesn’t put out much heat in the first place that can be substantial, it meant I could boil water, it’s more of a little simmer, but plenty of heat to cook anything.

When I finally decided to try to bake cookies, I knew I needed some way to hold the heat in, so I would have to build a mini oven. My first try was with a 5 oz. tuna can to hold the cookie and my sierra cup to cover it and hold the heat in, it worked well until I started to bake other things where I used a larger 10 oz. tuna can. The sierra cup wasn’t large enough to cover the larger tuna can, so I rummaged around in my pantry and found a nice metal 3 cup bowl, it was perfect and became my 3rd favorite cooking vessel. With these 3 things I could cook almost anything. I only use the glass pot to cook larger quantities and bigger meals, like ribs, a Cornish game hen, chicken wings and even a corned beef. But that’s for another story. So if you want to bake cookies or hard boil a couple of eggs or even fry a steak, these are great cooking vessels to start with. You should be able to find them in your local big box stores, try the camping section. If you can’t find them, I have provided links to them at Amazon.

Camp Cup, 16 oz. Hard boil an egg, heat soup, cook oat meal, ramen or mac & cheese.

Sierra Cup, 12 oz. A great little fry pan. Scramble or fry an egg or a hamburger. Also it’s a nice little bowl.

Bowl, 3 cups Turn it over and it makes a top for your mini oven. Try some cookies or maybe a mini coffee cake. I’ve even fried a steak in mine.

I spent the day with my favorite GUYs. We had Wings Cooked in a Coffee Maker with Guy Fieri Sauce. It doesn’t get much better than that. Usually on Super Bowl Sunday you’ll find me gone to town, shopping. I’m not a big football fan, but we had a friend come from out of town to visit and watch the game so I decided to do a little coffee maker cooking. Since I was already going to have my two favorite guys here, I decided to invite one more, but since Guy Fieri could make it we decided to feast on his line of sausages and sauces without him. I dug out my spare coffeemaker and had a blast cooking all kinds of snacks and treats all day long. ,
