Happy Våffeldagen (Waffel Day) – March 25th

Liege waffle with strawberries and hot fudge.
Heat and eat some waffles with you coffee maker.

Yep, I took a little bite out of it.

You can heat up some waffles on the burner of your coffee maker.

I got some Liege waffles from a local place called the Waffle Hut and put them in the freezer.
You can use any frozen waffles, but I also found some fresh in a pkg. at my local store and these would be great to send to you Soldier.
Thaw your waffles if they are frozen.
Put a piece of foil on your burner, put the waffle on to cook with a little lid over it.
Flip them over.
Cook time about 20 minutes.

They are so much better than those cooked in the microwave, they will be crispy on the outside and soft inside.

Top with anything you like.

I found some fresh waffles and I will post about them later, now I have to get back to farm chores. Spring on the farm is such a busy time for me.

It’s National Pancake Day and I can’t think of a better way to celebrate it than cooking some pancakes with your coffee maker.

Pancakes are great anytime of the day or night and if you only have a coffee maker, no problem, you can cook your cakes and eat um too.

Use your favorite pancake mix or make it from scratch.

Cover the burner with non stick foil, oil it and turn on the machine.

Let it warm up while you mix up your batter, use what ever you like.

1 cup of mix makes about 6 pancakes.
Use a little less than ¼ cup batter per cake.

Cook until the bubbles stop forming and popping, then check for brownness, they will not get very brown unless you leave them on for a long time and by then the might be a little rubbery. Turn them over and cook for a couple more minutes.

I use non-stick foil placed on the burner, smooth it out nicely, and put a little oil on it with a paper towel. I have a little pan that I use sometimes but it is faster with the foil on the burner. Sometimes I put a little lid over it to help it cook faster, it collects a lot of moisture so be sure to wipe it off between each pancake.

Blueberry Sauce
Blueberry Fruit Spread from a jar.
Water to thin.
Fresh blueberries if you have them.

Put the spread in a pan to warm on the burner, add a little water to thin, add some berries and heat till warm.

Chocolate Cupcakes. Making special treats with your coffee maker is fun and easy and even better if it’s chocolate. You can bake 4 mini cupcakes at a time with your coffee cake maker.

I only make mini cupcakes, as larger ones won’t cook all the way thru. Use any recipe or your favorite Chocolate Cake Mix. If you don’t want chocolate use any flavor you like.
I only use water when using a mix to make cupcakes with my coffee maker, it makes a lighter cupcake than using eggs and oil. I’m not sure why, it might have to do with baking at such a low temperature. (Anyway it’s all about experimenting, so try what ever you want.) Besides it makes it real easy to just add water, you don’t need to have anything else on hand. Since you’re not using eggs, you can eat the batter raw, it makes a great frosting if you have any left over.

You can make 4 mini cupcakes at a time with your coffee maker. But you’ll need to build a mini oven.

Mini Oven 1 metal bowl, (three cup size will works nicely).

Cupcake Holders 4 metal cupcake holders.
A few things I’ve tried.

1/8 cup measuring cups, sold individually as coffee measuring cups. Cut the handles off leaving about 1 in. I used tin snips to cut mine.

Sleeves made from a soda can. Cut 3/4 in. strips from a soda can and use 2 paper clips to hold them together. I used my scissors to cut them, be careful they will be sharp.

                   Mini Oven Cupcake Holders

1/8 cup measuring cups and a sleeve made from a soda can

Pre-warm your oven place your metal bow upside down on top of the burner and let it warm for about 5 minutes.

Bake Your Cupcakes (4 at a time)

1 cup cake mix (makes about 12 cupcakes / 3 batches).

1/2 c water (this is only a approximate, some batters may take less).

Make the batter just slightly looser than brownie batter, but not so loose that it will pour.

Put papers into your metal cups and fill just over 1/2 way with batter.

Put your 4 cups onto the burner.

Put your heated bowl back over them.

Bake 15-18 minutes.

Frost or leave un-frosted, but remember if you make your cupcakes with out eggs you can use some of the batter to frost them. And who doesn’t love to eat the batter and lick the spoon.

For specific instructions on the 8 different types of oatmeal see http://www.cookingwithyourcoffeemaker.com/513/oatmeal-cooking-chart-2/

Is that a little tiny pan? Yep, I’m a collector and now I collect tiny pans, fry pans, cups, bowls and any other metal container that will fit the burner of my coffee maker. But still some of my favorite cooking vessels are the Sierra cup and camp cup I started with, so use whatever you can find. Oh, but don’t use those cute little cast iron fry pans, they take to much heat to get them hot and then the handle wicks it all away.

Be sure your cup or bowl fits flat on the burner and has a lid of some kind, almost any small lid will do, even if you have to turn it upside down so it covers well. In a pinch, just use foil. Covering with a lid is the most important thing you can do, it will raise the temperature 30-40 degrees.

You will need to adjust the amounts on the chart to suite your preferences.
• Pour water into the reservoir.
• Put oats into a metal cup or bowl and put it on the burner.
• Turn on machine.
• When water is done dripping onto the oats, stir and cover with a lid.
• Stir occasionally.
• If your oatmeal is to thin, leave in on the burner for a few minutes with the lid off.
Note:
The cooking time for oats cooked with the coffee maker and oats cooked on top of the stove will be different.
1. Stove top cooked oats will reach a boil more quickly.
2. You will notice a big difference in some of the cooking times and the amounts of water, this is because the chart for coffee maker cooked oats is to my preference.

What’s your favorite oat and how do you like to top it?

Instant Oatmeal with Fruit and Nuts
There is no reason breakfast can’t taste like dessert. See some of my favorite toppings listed below.

The coffee maker is the perfect way to make instant oatmeal, at home or away.
When I make instant oatmeal it never seems quite done if I just pour hot water in it. It just seems a little raw, so I make mine with a coffee maker in a metal bowl. I let the water drip onto the oatmeal, stir and let it set a few minutes on the burner. This really is a great way to finish it off and it turns out perfect. Stir often, and don’t leave it on to long.

.

Put 2 pkg instant oatmeal in a metal bowl or cup.

Put the bowl on the burner of the coffee maker.

Pour 1 cup of water in the reservoir.

Turn on the machine and let the water drip thru on to the oats.

Let the oats sit on the burner for a couple of minutes, be sure and stir often.

Toppings

Pureed Fruit (Baby food adds a great flavor, it’s pure fruit with no aditives.)
* You can always keep some on hand.

Morning Trail Mix
* Dried fruits and nuts along with a little maple syrup.

Banana-Coconut-Oatmeal Pie
* Banana puree, shreaded or flaked coconut and maple syrup.

I hope you like oatmeal as much as we do. My husband had to eat all 8 kinds of oatmeal so I could make this chart, and he isn’t tired of it yet.
We recommend that you cook your oats in a metal cup or bowl, the metal conducts the heat better so they will cook faster and you won’t have to clean your pot. Be sure your cup or bowl fits flat on the burner and has a lid of some kind, almost any small lid will do, even if you have to turn it upside down so it covers well. In a pinch, just use foil. Covering with a lid will raise the temperature 30-40 degrees.

Pour water into the reservoir.

Put oats into a metal cup or bowl and put it on the burner.

Turn on machine.

When water is done dripping onto the oats, stir and cover with a lid.

Stir occasionally.

If your oatmeal is to thin, leave in on the burner for a few minutes with the lid off.
